ChEmory, the Department of Chemistry’s ACS award-winning undergraduate chemistry club, volunteered at Fernbank Science Center during National Chemistry Week!
Club members taught children to make their own gummy worms using sodium alginate and a calcium chloride solution. The underlying chemical process involved in this demo is called “spherification” – the same process of molecular gastronomy that very high end restaurants use to make custom roe!
